30 minutes
3 tbsp almond butter
2 tbsp avocado oil
1/4 cup non-dairy milk
3,5 tbsp coconut sugar
1/2 tsp vanilla extract
1/3 cup gluten-free all-purpose flour
1/2 cup almond flour
1/2 tsp ground cinnamon
1 tsp mixed spice
1/2 tsp baking powder
1/4 tsp salt
1 medium apple, cored and chopped, divided
Tahini caramel (optional):
1 tbsp tahini
1 tbsp maple syrup
water, as needed
For topping:
Vegan vanilla ice cream
Preheat oven to 200C7390F. Oil an oven-proof skillet, preferably cast-iron.
In a medium-sized bowl, combine the almond butter, avocado oil, milk, coconut sugar and vanilla. Whisk until uniform. Stir in the flour, almond flour, cinnamon, mixed spice, baking powder and salt. Finally, fold in most of the apples, leaving a handful for topping. Pour the mixture into the pan and bake in the oven for 20-25 minutes, until firm to touch and browned. Let cool a bit, then serve with ice cream and tahini caramel. Enjoy!
