Vegan Easter Cookies and Cupcakes – Easy and Oil Free!

~~Almond Cookies~~
–Ingredients–

(for cookies)
-1.5 cup whole wheat flour
-⅓ cup maple syrup or agave
-½ tsp baking powder
-1 tsp almond extract
-2 tbsp almond butter

(for glaze)
-1 cup powdered sugar
-1 tsp vanilla extract
-2 tbsp non dairy milk

–Instructions–
-preheat oven to 350 degrees
-combine all cookie ingredients and form a dough ball
-roll out dough to about ⅛ of an inch thick and cut out using any cookie cutter your heart desires
-bake cookies on a lined or greased baking sheet for about 10 minutes
-once completely cooled add glaze
-for the glaze simply mix together all of the glaze ingredients (if you want a strawberry glaze, just add 1 tbsp of strawberry jelly to the glaze mixture)
-Optional: top with sprinkles or sugar
–these cookies will stay fresh at room temperature for about 5 days if kept in an airtight container

~~Chocolate and Vanilla Cupcakes~~
–Ingredients–
(for cupcakes)
-1 cup whole wheat flour
-½ cup cane sugar
-½ tsp baking powder
-½ tsp baking soda
-¼ cup apple sauce
-½ cup non dairy milk
-1 tsp vanilla extract
-1 tsp apple cider vinegar
-(for chocolate cupcakes) add 2-4 tbsp cocoa powder, depending on how chocolatey you want them to taste

(for frosting)
-tub of pre made vegan vanilla frosting
-crushed freeze dried strawberries
-spirulina or any other greens powder

–Instructions–
-preheat oven to 350 degrees
-combine all dry ingredients for cupcakes
-add wet ingredients and mix until combined- be careful not to overmix!
-add cupcake batter into a lined or greased muffin pan
-bake for 18-20 minutes
-once cooled, frost and decorate as desired
-for the frosting mix in crushed freeze dried strawberries or spirulina
-to top, I used Annie’s brand chocolate bunny grahams and Bernie’s farm animal cookies
–these will stay fresh at room temperature in an airtight container for about 4 days or for a week in the fridge
