On this episode Candice collaborates with fellow YouTuber Laurie from The Icing Artist channel to show you how to make a decadent Vegan Coconut Lime Cake and decorate it like the pros.

As many of you are no doubt already aware Candice is not a baker. It’s just not something she ever considered to be one of her stronger skill sets in the kitchen so she has generally strayed away from it. Be honest with yourself, you know you’ve made a lopsided cake before and threw it away before anyone could see it. After you watch this you’ll be a vegan cake baking force of nature in no time at all, and you’re going to get some icing pointers that will dazzle any cake lover as well.
This recipe was actually created by Isa Chandra Moskowitz. When you’re not a natural baker it’s best to follow someone’s else’s recipe to make a cake. To get started making your Vegan Coconut Lime Cake you’re to get together your wet ingredients. In a mixing bowl combine coconut milk, soy milk, vanilla exttract, coconut extract, lime zest, and coconut oil. Once those are all in the mixing bowl either mix them by hand, or if you happen to have a fancy stand mixer by all means use it instead. Mix your ingredients until you reach a nice creamy consistency. Now that you have the wet ingredients for your Vegan Coconut Lime Cake mixed well it’s time to move on to your dry ingredients.
In another mixing bowl add flour, shredded coconut, baking powder, or optionally baking soda, and finally salt. Whisk these ingredients together well. At this point you now have both your wet ingredients and your dry ingredients and it’s time to bring them together to create your batter. This is the about time you are going to wish you had some sort of stand mixer if you don’t. You are going to slowly add your dry ingredients to your wet ones as you mix them. You will see in the video this is a much easier task with a stand mixer but could certainly be done without one, though you may want to enlist a helper. It’s important to just add a bit at a time to avoid clumping. Clumping is extremely undesirable so take your time adding in those dry ingredients.
When you’ve reached your desired, clump free batter consistency it’s time to pour that batter into your baking pan. Candice and Laurie have chosen a taller cake pan that is round. You can feel free to use any shape of pan you like, this is your cake after all. One thing that has been a problem for Candice, and many others in the past, is the cake sticking to the bottom of the pan. In the past she would typically spray the cake pan down with non-stick cooking spray.
Laurie says the best way to go is to actually line the cake pan. Laurie grabs the parchment paper and pulls a sheet out, then coats the inside of the baking pan with vegan butter. After that she puts the top of the pan down on the parchment paper and draws a line around it with a marker also marking off a rectangular piece using the width of the pan as a guide. Then she simply cuts her 2 shapes out of the parchment paper and lines her pan with them.
Pour your batter into your cake pan and smooth out the top. Now gently tap your cake pan on the counter to dispel any air bubbles that might be hiding inside. The next step is to put your cake in the oven for about 40 minutes. When you pull it out use the “toothpick test” to make sure your cake is cooked all the way through. It should be a nice golden brown on top. Now cut your vegan coconut lime cake in half and pay close attention to the way Laurie goes about frosting the one she makes with Candice. You’ll see she creates a layer of frosting on top of one half, stacks the other half on top, then spreads a thin, even frosting layer around the entire cake. When you watch her decorating you begin to realize why she’s called The Icing Artist.
