This is one of my favorite cakes, i make for special occasions like my birthday. its simple and easy vegan carrot dessert to make for those who don’t want to wait for the baking process and crave for something sweet. it takes less than 30 minutes to make and can enjoy for weeks to come.
INGREDIENTS
Cream:
2 cups of soaked cashews. for 2 hrs or overnight
1 cup coconut milk or coconut water
optional coconut butter or coconut oil 2 -3tbsp
1/2 a vanilla pod
1 cup of soaked pitted dates or 3/4 cup according to how sweet you want it
2-3 tbsp of lime or lemon juice
Blend all ingredients in a blender till smoothie
Filling:
handful of walnuts-first food process it.
2 cups of carrot pulp
3/4 cup of raisin and sultanas
1 cup of pitted dates
pinch – 1/4 tsp of nutmeg
1/4 tbsp of cinnamon
thumb of grated ginger
1/8 tsp of vanilla powder
