vegan [CRAB] cakes

-1 cup marinated artichokes
-1 cup hearts of palm (5 pieces)
-2 stalks of celery (chopped)
-2 cloves of garlic
-1/2 squeezed lemon
-3/4 cup panko breadcrumbs
-2 t Old Bay seasoning*
-1/8 to 1/4 cup whole wheat flour
-1 T high heat oil (I used grape seed)

1. Pulse artichokes, hearts of palm, celery, garlic, breadcrumbs, and seasoning in a food processor.
2. Add flour to help hold mixture together.
3. Heat skillet on medium and add oil.
4. Form cakes and cook on each side for about 2 mins (or until golden brown).
5. Serve warm or cooled (I prefer cooled) with greens and tartar sauce.

*I made my own Old Bay seasoning with roughly 1/4 teaspoon of ground mustard, black pepper, ground ginger, white pepper, sweet paprika, celery seeds, allspice, nutmeg, cinnamon, and cardamom.
