Here is a super easy vegan chocolate cupcake and homemade vanilla frosting recipe. This is great for Valentine’s Day for that special vegan sweetie. I used an organic chocolate cake box cake mix. Doesn’t get easier than that! The best part is you do not need eggs! No eggs needed! I used 3 tablespoons of chia seeds soaked overnight in water. This mixture is what gives it the gooey egg consistency and makes the batter extra moist. Chia seeds are a great egg replacement when baking!
Just follow the directions on the organic chocolate cake box mix but instead of using eggs, use the chia seed mixture.
The Vanilla Frosting Recipe:
3 drops vanilla extract
3 cups organic powdered sugar
1 cup vegan butter
1/4 cup avocado oil
(for creamier frosting, melt the butter first)
