Alfredo Pizza

Pizza Dough:
-4 cups all-purpose flour
-1 t sugar
-1 pkg instant yeast
-1 t salt
-1 1/2 c warm water
-2 t olive oil

Pizza dough instructions here:

Pesto Sausage
-Lightlife GimmeLean Veggie Sausage
-1/2 cup of chopped roasted almonds
-2 T fresh chiffonade basil
-2 cloves of minced garlic
-1 T olive oil
-Pinch of salt and crushed black pepper

1. Combine all ingredients.
2. Brown in olive oil, breaking up the mixture into crumble sausage pieces. Do not over cook, as it will cook more in the oven.

Alfredo Sauce
-2 cups cashew cream (1 cup soaked cashews & 1.5 cups of water)
-1/2 cup finely diced red onion/shallots
-3 cloves of crushed garlic
-2 T fresh thyme
-1 t onion powder
-1 t garlic powder
-1.5 t salt
-1 t black pepper
-Juice of 1 lemon

1. Caramelize red onions/shallots then add garlic and thyme.
2. Deglaze pan with vegetable stock and let reduce by half.
3. Turn off heat and add cashew cream. The residual heat will thicken sauce. Keep stirring to avoid clumps.
4. Add onion and garlic powder, salt, pepper, and lemon juice to finish.
5. Taste and adjust seasonings to your liking.

Alfredo Pizza:

1. Form pizza dough
2. Add a layer of Alfredo sauce. Followed by spinach, thinly sliced red onion, and pesto sausage.
3. Bake on pizza stone or flipped cookie sheet at 500 for 8 to 9 minutes.
4. Finish pizza with a swirl of Alfredo sauce, basil, black pepper, and olive oil.
