The Everything Bagel Avocado Toast
Spread your toasted bread with cream cheese, top with smashed avocado, and then sprinkle with Trader Joe’s Everything But The Bagel Seasoning.
Tofu Scramble Avocado Toast
This is pretty much an entire breakfast on top of toasted bread. Take your favourite tofu scramble recipe (mine is listed below) and your favourite veggie bacon (I like King’s Vegetarian Bacon) and top your avocado toast with a hefty spoonful of tofu scramble and crumbles of cooked vegan bacon and a handful of your favourite vegan cheese.

Street Corn Inspired Avocado Toast
Create a corn salad with corn kernels, halved cherry tomatoes, lime juice and cilantro. Then make an avocado toast like you usually would and top it with a pile of the corn salad, and your favourite vegan cheese. I used a vegan feta.

Haha yes, you can totally toast bread in the oven. Showed up to an airbnb once that had a ‘fully supplied kitchen’… that didn’t have a toaster. So we improvised. Turn on the broiler in the oven and toast a few minutes per side right on the rack. If anyone has ever wondered if that actually works without making burnt or too crispy bread, it totally does. :p
Yum! Yum! Yum! I’d def make the avo, scramble & bacon toast, and add your Weekend @ Bearnaise sauce to make it extra naughty! All 3 tricked out avo toasts look deadly though!

Wrap your cleaned avocado pits in a moose paper towel, pop em in a zip bag, and throw them under your sink for a month and they should grow!
