Vegan Toddler Banana Oatmeal Peanut Butter Cookies Recipe:
Ingredients:
2-4 ripe bananas, mashed
1 Tbsp of vanilla flavor (or your fave flavoring)
3/4 cup peanut butter (smooth, all-natural, organic, if possible)
3 Tbsp pure maple syrup (you can sub with agave nectar or honey)
2 cups old fashioned oats
1/2 cup coconut flour
1 tsp baking powder
1 tsp cinnamon (you can sub nutmeg or any spice)
1/4 tsp salt (optional, of course)
1/2 cup vegan chocolate chips (or maybe even cocoa nibs)
Instructions:
Preheat oven to 350 degrees
Line a cookie sheet with parchment paper (if you don’t have parchment, use a silicone cookie sheet or grease with vegan butter)
Mix all wet ingredients together
In a separate bowl, mix dry ingredients
Add dry ingredients to wet and stir until sticky
Form balls and place on cookie sheet — depending on how big you like your cookies, you’ll yield a varying amount of cookies. We like to make 1-2 Tbsp sized, cookies which will yield about 2 dozen bite-sized bits. Keep in mind that the larger the cookie, the longer it takes to cook.
Place in oven for 15-20 minutes.
Let cool for 10-15 minutes.
