RECIPE
Cookies:
3/4 cup organic sugar
1/2 cup pure pumpkin puree
2 Tbsp. oil (light olive, vegetable or coconut will work)
1 tsp. vanilla extract
2 cups gluten-free oat flour
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/4 tsp. ground allspice
Frosting:
1 cup organic powdered sugar
1 Tbsp. vegan margarine
2 tsp. almond milk (or other non-dairy milk)
1/2 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, pumpkin puree, oil, and vanilla. Stir well. Add oat flour, baking powder, cinnamon, salt, nutmeg, and allspice. Stir well. Scoop dough and press onto a cookie pan to form 12 cookies. Bake about 15 minutes. Transfer cookies to a cooling rack and let them cool completely. While they are cooling, make the frosting–to a bowl, add powdered sugar, vegan margarine, almond milk, and vanilla. Stir until smooth. Frost the cooled cookies. Makes one dozen cookies.
