Quick & Dirty, Triple Chocolate Vegan Cake

This cake is rich, fudgy, and decadent!

Simple recipe, using basic ingredients. Ingredients that most people (vegan or not) already have in their kitchen. Non of these ingredients are obscure or hard to find. No trips to the health food required.

Chocolate Cake:
1 chocolate cake mix
1 avocado
1/2 cup coconut oil
1 1/4 cups coffee (won’t make it coffee flavoured, brings out chocolate flavour)
Bake at 350 F for 30-35 mins.

Ganache Filling:
1/2 cup coconut milk (unsweetened carton kind works best)
1/2 cup chocolate chips (I use camino or enjoy life brand)
Heat milk up in microwave or stove top. Stir in chocolate and stir until smooth.

Chocolate Whipped Cream:
1 can of chilled, full fat coconut milk (using only the solid part)
2 tablespoon coco powder
2 tablespoon icing sugar
Whip together in mixer.

Before assembling ensure that everything is cool. Ganache and cake should be no more than room temperature, whip-cream should be chilled until use.
YES, I USE A CAKE MIX IN THIS RECIPE, I NEVER SAID IT WAS CLEAN OR SUPER HEALTHY. I did research the ingredients in this cake mix. They vegan friendly according to PETA’s website as well.
