RECIPE
2/3 cup vegan margarine
1/4 cup organic sugar
1 tsp. vanilla extract
1 cup white rice flour
1/2 tsp. salt
1/4 cup shelled pistachios, chopped
1/4 cup vegan white chocolate chips (I bought some from veganessentials.com)
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add margarine, sugar, and vanilla. Cream together until smooth. Add rice flour, and salt. Stir well. Add pistachios, and vegan white chocolate chips. Stir in. Shape into small flattened disks and place on a baking pan. Bake for 18-20 minutes. Makes one dozen cookies.

looks good ! is it possible to replace margarine with coconut oil ?
I haven’t tested it, but it would probably work– it might not be as shortbread-y though.
