RECIPE
1/2 cup organic brown sugar
1/2 cup organic sugar
1/2 cup peanut butter
1/2 cup canola oil (or other neutral oil)
1 tsp. vanilla extract
1 1/2 cups gluten-free oat flour
1 1/3 cups gluten-free oats
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
Filling:
2 cups organic powdered sugar
3 Tbsp. peanut butter
3-4 Tbsp. non-dairy milk
1 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, sugar, peanut butter, oil, and vanilla extract. Stir well. Add oat flour, oats, baking powder, salt, and baking soda. Stir well. Scoop and press the dough onto un-greased cookie pans, to make 24 cookies. Bake 10-12 minutes. Transfer to a wire rack to cool completely. To make the filling, to a bowl, add powdered sugar, peanut butter, non-dairy milk, and vanilla extract. Stir until smooth. Flip half of the cooled cookies over, and drop about a Tablespoon of the filling on each cookie. Top each with another cookie, and press down. Makes one dozen sandwich cookies.

These look so good! I want to make but going to add less sugar and possibly sub half the oil for something. But yummmm!

Anyone tried this oil-free and recommends substitute
I haven’t tested oil-free substitutes, but you could try using non-dairy milk instead, or more peanut butter. The texture will probably change, but it would probably still be ok.
