One of my favorite muffins when I was younger was lemon poppyseed flavor. I decided to experiment with creating a quick, healthy dessert that shared the same amazing flavor! This is definitely one of the raw recipes I’ve been enjoying most lately!

Curious…why are you not using poppy seeds rather than the extra chia seeds if that is the flavor you like?
Since I do not own a dehydrator, I am wondering if I could put them in the oven at 200 for maybe an hour, and leave the door open a bit. What do you think?

Is there a reason you’re using dry chia seeds instead of actual poppyseeds?
*No Bake Lemon Chia Seed Cookies*

inspired by lemon poppyseed muffins
*Blend/Pulse in food processor*
25 medjool dates (pitted & decapped)
1/2 cup coconut flour (more for garnish)
1/2 cup coconut butter
2T chia seeds (soaked in 4T water for 1/2 hour)
1-1/2T lemon zest (more for garnish)
1/2t vanilla extract
*When blended to cookie texture, blend/pulse an additional*
1T chia seeds (dry)
Form mixture into balls and flatten
Garnish with extra coconut flour and lemon zest
Eat as is for a moist cookie
or dehydrate @ 105°F for 1-2 hours for a firmer cookie
