INGREDIENTS FOR 30 BISCUITS:
300g all-purpose/plain flour
60g icing sugar
55g apple sauce
160g dairy-free butter

For the decoration:
dark chocolate, melted
icing sugar
jam

STEPS
– Mix flour with icing sugar.
– Add the butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs.
– Add the apple sauce, and incorporate it by hand to create a rough dough. Knead the dough briefly on a floured surface until smooth, wrap it in cling film and chill for 4 hours, better if overnight.
– Preheat the oven to 160°C.
– Roll the dough to a thickness of 5mm (¼ inch), cut it into shapes using different cookie cutters, place the shapes on baking tray lined with greaseproof paper and bake for 12-14 minutes, or until the desired colour is achieved. Cool down completely before decorating.
– Fill the cookies with jam, sprinkle them with icing sugar, or dip them into melted chocolate to create a variety of different shapes and flavours.

SUBSTITUTIONS and TIPS
– The apple sauce can be substituted with 50g of soy milk

  1. I love your videos not only for their high quality, but also to see vegan cooking. As a non-vegan that doesn’t know any vegans (I know a few vegetarians but I don’t see them often or know them well enough to eat with them), I’m sorta in the dark with this stuff. I want to try most of these recipes, but vegan food is not in my budget (especially living off of unemployment right now). Do you think your recipes would work with their non-vegan counterpart ingredients? Also, do you use honey ever? I know vegans don’t use animal products, but buying honey is good for the bees! Specifically local or organic honey, the real stuff. I know some vegans won’t use it, but I don’t know why since it’s good for the bees, not bad!
