jack o’ lantern pumpkin cookies Something Vegan

RECIPE
1/2 cup organic sugar
1/4 cup organic brown sugar
1/2 cup neutral oil
1/2 cup pumpkin puree
1 tsp. vanilla extract
orange food coloring (optional)
2 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. salt
1/4 tsp. ground allspice
Frosting
1 cup organic powdered sugar
1 Tbsp. non-dairy milk
1/2 tsp. vanilla extract
black food coloring

Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, brown sugar, and oil. Stir well. Add pumpkin, vanilla, and orange food coloring. Stir well. Add flour, baking powder, cinnamon, ginger, nutmeg, salt, and allspice. Stir until the dough comes together. Roll the dough out. Use a cookie cutter to cut the dough into pumpkins. Transfer the pumpkins to a baking pan, and repeat with the rest of the dough. Use the edge of a spoon to press grooves into the pumpkins. Bake 10-12 minutes. Transfer to a cooling rack to cool completely. To make the frosting, to a bowl, add powdered sugar, non-dairy milk, vanilla, and black food coloring. Stir until smooth. Transfer to a plastic bag or piping bag. Pipe jack-o’-lantern faces on the cooled cookies. Makes about 16 cookies (depending on size).
