This is a super simple recipe of how to make delicious banana oat raisin cookies that are perfect as a breakfast cookie or as grab and go snack. We added chocolate chips to make it tempting for the kids 🙂
Ingredients:
1) 2 Ripe Bananas
2) 1 Cup Old-fashioned Rolled Oats
3) 2 Tbsp Almond butter
4) 1/2 Cup Chocolate chips
5) 1/3 Cup Raisins
Method:
Pre-heat oven to 350 F / 180 C. In a mixing bowl, mash bananas with the help of a fork, add almond butter, oats and fold in chocolate chips and Raisins. Line a baking tray with parchment paper, greased foil or silpat. Scoop out the cookie batter on baking tray and flatten them gently (i used a measuring cup for this). Bake for 15 minutes. Allow them to cool for a couple of minutes before you dig in!
Makes 6 Big cookies!
