I used my old vegan cookie recipe but this time I decided to try to make it healthier. Instead of white flour I used whole wheat flour and instead of cane sugar I used coconut sugar. Since coconut sugar is coarser than regular sugar it needed to be dissolved in the coconut oil. The cookies exceeded my expectations: they were soft, chewy, coconutty (lol) & SWEET ! You can add less sugar if you don’t like cookies that are too sweet. This recipe can yield about 24 small cookies or about 12 large cookies. I love large size cookies so I made 13 cookies 😊 Bake at 350 degrees for about 15 minutes.
Wet ingredients
•1/2 cup coconut oil
•2 tbsp maple syrup
•1/4 cup coconut milk
•1 tbsp vanilla extract
Dry ingredients
•1 1/2 cups whole wheat flour
•1 cup coconut sugar
•1 tsp baking powder
•1 tsp baking soda
•1/2 tsp salt
•10 ounce semi sweet chocolate chips (1 1/4 cups)
