Healthy Lime and Courgette Vegan Loaf

Welcome back to my channel! I am now three months in to my Vegan Fitness Journey and have another healthy cake recipe for you all. Lime and Courgette Cake is one of my favourites.

This recipe uses Sorghum flour which also makes it 100% gluten free.

Recipe for this Vegan Lime and Courgette cake below:

Ingredients
1 1/2 Cup of Sorghum Flour
1 Cup of ground almonds
3 flaxseed eggs (3 tbsps of flaxseeds mixed with 9 tbsps of water)
2 tbsps of chia seeds
2 medium courgettes grated
zest of 3 limes
2 tbsps of olive oil
1 cup of coconut sugar
2 tsps of cinnamon
1 tsp of baking powder

Method
1.Preheat the oven to gas mark 3
2.In a small bowl place 3 tbsps of flaxseed in 9 tbsps of water and leave to rest
3.Grate the courgettes and place into a bowl
4.Zest the limes and mix in with the courgettes
5.Add in the olive oil and flaxseed mixture that should now be gloopy
6.Stir in the chia seeds and the rest of the ingredients until well combined
7.Place into a loaf tin and top with cut slices of lime and sunflower seeds and pumpkin seeds
8.Bake in the oven until well browned. This will take 50 mins and then 10 more minutes with a piece of baking foil over the top of the loaf.
