These recipes are super healthy, you can eat these any night of the week, no need for a cheat meal. By eating vegan, and taking out the unnecessary fats, you can eat decadent delicious food every night without the guilt and in doing so help maintain a lean, fit body.

RECIPES –

Tandoori pizza

Ingredients :

Pizza –

pizza base of your choice
whole head of cauliflower (makes two pizzas)
pizza sauce

Tandoori marinade –

1 cup coconut yoghurt
tsp chilli powder
tsp garam masala
tsp smoked paprika
tsp tumeric
3 cloves of garlic (crush)
2 tsp fresh grated ginger
half the juice of a lemon

Tzatziki –

1/2 cup coconut yoghurt
Tbsp garlic powder
juice of half a lemon

Garnishes –

half a cucumber
1 stem spring onion
handful of coriander

Mango salsa –

2 mangos, cubed
1 avocado cubed
half red onion chopped
hand full of cherry tomatoes diced
handful of chopped coriander
half the juice of a lime

Method-

Mix all the tandoori marinade ingredients together and poor over chopped cauliflower. Mix thoroughly so all cauliflower is covered. Spread out on a lined baking tray and cook in oven for around 25-35mins at 200degrees.

Spread pizza sauce on pizza base and place cooked cauliflower on top. Return to oven until base is golden and crisp (this will be different depending on what pizza base you have chosen, follow directions on the back of packaging).

Mix the tzatziki ingredients together and put in a squeezey bottle or just place in dish on the side.

Mix all the mango salsa ingredients together and place in a dish to serve along side pizza.

Once pizza is cooked, garnish with whatever toppings you love, coriander, cucumber and spring onion go particularly well with this!

Serve pizza with tzatziki and mango salsa for a fresh yet satisfying, delicious meal.

Creamy pumpkin, mushroom pasta

Ingredients :

pasta of your choice I used penne
1 onion chopped into thin slices
half of a leek chopped into thin slices
3 cloves of crushed garlic
half a pumpkin (cubed and roasted)
tsp Thyme
tsp coriander seeds
tsp Tarragon
Tbsp maple syrup
2 cups chopped mushrooms
half a can of light coconut milk
Tbsp dijon mustard
juice of half a lemon
salt and pepper to season
Fresh basil

Method –

Place chopped leek and onion in a pan with about 1/2 water (instead of oil) and soften.
Add in crushed garlic cloves, thyme, coriander seeds, tarragon and maple syrup. Simmer on medium heat for about 5 mins adding in more water when it gets dry.
Add in chopped mushrooms,coconut milk, lemon, mustard and salt and pepper. Simmer for about 10 more mins.
Add in roast pumpkin ( roasted for 30 mins 180 degrees), simmer for 5-10mins.

Serve with pasta and garnish with fresh basil.
So creamy and delicious, and so so so healthy! You would never know!
