RECIPE
2 cups all-purpose flour
1 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. baking powder
1/4 tsp. ground cloves
1/4 tsp. salt
1/2 cup organic brown sugar
1/2 cup canola oil (or other neutral oil)
1/2 cup molasses
Icing
1 cup organic powdered sugar
1 Tbsp. vegan margarine
1/2 Tbsp. non-dairy milk
1/2 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add flour, ginger, cinnamon, nutmeg, baking powder, cloves, and salt. Stir well, and set to the side. To another bowl, add brown sugar, oil, and molasses. Stir well. Add the flour mixture, and stir until a dough forms. Roll the dough out on a floured surface. Cut out cookies using a deer cookie cutter. Place the cookies on a baking pan lined with parchment paper. Re-roll and cut the dough until all the dough has been used. Bake 10-12 minutes. Let the cookies cool completely. To make the icing: to a bowl, add powdered sugar, vegan margarine, non-dairy milk, and vanilla extract. Stir until smooth. Transfer to a plastic bag, or piping bag, and decorate the cookies. Makes about a dozen cookies—depending on the size of your cookie cutter.

Can i substitute the molasses ? If yes for what ?
Molasses is a pretty important part in a gingerbread cookie, so I wouldn’t really recommend replacing it. I guess you might be able to use agave, or another liquid sweetener, but I haven’t tested it, and it wouldn’t have that classic gingerbread flavor.
