A cookie that’s delicious all year round but extra special for the holidays- this is our take on the ginger molasses cookie using our Monroe blondie gluten free and vegan baking mix. Crisp on the outside, soft on the inside, caramelized by the brown sugar: these cookies are super simple to make and quite unique. Our spice blend is not the typical cinnamon/ginger/nutmeg combo, but we use cocoa, cardamom and black pepper? The Results: an unforgettable cookie for any of your holiday parties, gift boxes or day to day eating!!
INGREDIENTS
– 1 Dolled Up Desserts Monroe Blondie Baking Mix
– 1/2 cup coconut oil, soft but soild
– 1/4 cup fancy molasses
– 1/4 cup brown sugar (coconut sugar also works)
– 1 tbsp cocoa powder
– 1 1/2 tbsp fresh grated ginger
– 2 tsp ground ginger
– 1/2 tsp cardamom
– 1/4 tsp black pepper
– 2/3 cup gluten free flour (we use oat)
– 1/2 tsp xanthan gum
– 1/2 tsp baking soda (for a flat crisp cookie) or baking powder (for a slightly more puffy cookie)
