Hi guys, this is a soup I’ve made a WHILE back – it was featured in one of my ‘what I ate in a day’ videos –

I thought I would just make a separate video showing you guys how to make this super creamy and delicious recipe!

VEGAN POTATO + LEEK SOUP –

Ingredients-
• 1 tablespoon olive oil (I used a little less)
• 4 leeks, white and light green parts, sliced
• 4 garlic cloves, chopped
• 4 potatoes, peeled, cubed (or more…)
• 4 cups vegetable broth (I used 2 vegetable stock cubes)
• 1 teaspoon rosemary
• salt and pepper
