These vegan carrot cake bites are simple to make, but are so YUMMY with a great combination of flavors and spices! You will fall in LOVE with this simple recipe because they are just the right amount of sweet you’d want in a regular homemade carrot cake and it could serve as an everyday healthy treat! Perfect to eat during summer because they are an easy no bake dessert 😀
Ingredients:
1 medium carrot
¼ cup almonds
¼ cup walnuts
½ cup shredded coconut (Plus more for coating)
2 tbsp dried currants
2 tbsp maple syrup
1½ tsp coconut oil
1½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
Steps:
1 Finely grate the carrot.
2 Process almonds and walnuts in a food processor until ground.
3 Add the rest of the ingredients, except for carrots, and process again.
4 Add the carrots and process until well combined.
5 Form the mixture into balls and coat them with shredded coconut OR crushed walnuts (Totally up to you!)
6 Line a dish with parchment paper. Place the balls on the parchment paper and refrigerate for 2 hours or longer for it to set
