Cake Ingredients:
2 cups plain flour
1.5 cups brown sugar
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
2 tsp nutmeg
1 tsp ginger
2 tsp vanilla extract
1/2 cup olive oil
1/4 cup flax seed paste*
1 tbsp apple cider vinegar
pinch salt
1/2 cup soy milk (or dairy-free milk)
1/2 cup sultanas
1.5 cup grated carrot
*blend 2 tablespoons of flaxseed until it’s powder. Pour it into a small bowl, add 6 tablespoons of warm water & mix it together until you have a paste (this pastes acts a binder in baking, similar to an egg)

Frosting:
1/3 cup dairy free butter (room temperature)
Juice of 1.5 lemons
1 tbsp vanilla extract
3.5 cups powdered sugar
