RECIPE
Filling:
2 cups apple, finely diced
3 Tbsp. organic sugar
2 tsp. all-purpose flour
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Crust:
2 cups all-purpose flour
1 tsp. salt
2/3 cup cold vegan margarine
3-4 Tbsp. cold water
Wash:
1/2 Tbsp. non-dairy milk
1/2 Tbsp. agave nectar
Organic sugar, for sprinkling
Preheat the oven to 400 Fahrenheit. To a bowl, add apples, sugar, flour, cinnamon, and nutmeg. Stir well, and set to the side. To another bowl, add flour, and salt. Stir together. Add vegan margarine, and cut in. Add water a bit at a time, stirring until the dough comes together. Stir together the non-dairy milk, and agave. Roll the dough out on a floured surface. Use a 3 ½-inch cutter to cut 18 circles of dough (re-roll the dough as needed, but try not to over-handle it). Put half of the circles onto baking pans lined with parchment paper. Top each with a spoonful of the apple filling. Cut small slits in the other nine dough circles. Place them on top of the filling piles, and use a fork to crimp the edges. Brush with the mixture of non-dairy milk, and agave, and sprinkle with a little sugar. Bake 20-25 minutes. Makes 9 hand pies.
