RECIPE
1/2 cup organic brown sugar
1/2 cup organic sugar
1/2 cup apple cider
1/3 cup neutral oil
1 tsp. vanilla extract
2 cups gluten-free oat flour
2 cups gluten-free oats
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground allspice
1/4 tsp. ground nutmeg
Frosting:
2 cups organic powdered sugar
2 Tbsp. vegan margarine
1 Tbsp. non-dairy milk
1 Tbsp. apple cider
1 tsp. vanilla extract
1/4 tsp. ground cinnamon
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, sugar, apple cider, oil, and vanilla. Stir well. Add oat flour, oats, baking powder, cinnamon, baking soda, salt, allspice, and nutmeg. Stir until well combined. Scoop and press the dough onto ungreased baking pans (to make 24 cookies). Bake 12 minutes. Let cool a minute on the pan, before transferring to a cooling rack to cool completely. To make the frosting: to a bowl, add powdered sugar, vegan margarine, non-dairy milk, apple cider, vanilla, and cinnamon. Stir well. Spread frosting on half of the cooled cookies, and top with the remaining cookies—to make 12 cream pies.
