RECIPE
2/3 cup organic sugar
1/3 cup apple cider
2 Tbsp. oil (canola, vegetable, or other neutral oil)
1 tsp. vanilla extract
2 1/2 cups gluten-free oat flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/8 tsp. ground allspice
1/8 tsp. ground cloves
For rolling:
3 Tbsp. organic sugar
2 tsp. ground cinnamon
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, apple cider, oil, and vanilla. Stir well. Add oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. Stir well. To a small bowl, add 3 Tbsp. sugar, and 2 tsp. cinnamon. Stir well. Roll the dough into balls, and then in the cinnamon-sugar, before setting on a baking pan. Bake 10-12 minutes. Makes about 16 cookies.
