ALMOND PULP RECIPES – SOFT COOKIES. If you make your own almond milk, chances are that you have some almond pulp left over. I am a believer in zero waste as much as possible, so this is a great way to use your almond pulp while also making yourself a tasty vegan cookie. These cookies are so soft and fluffy! Yum!
Ingredients:
2 ripe bananas, mashed
1 cup almond pulp
1/2 cup almond butter (or other nut or seed butter)
1/3 cup rapadura or coconut sugar (or you can use maple syrup)
1/4 cup ground flax seed
2 Tbsp coconut flour
1 tsp baking powder
1/2 tsp salt
1/3 cup chocolate chips or raisins
Bake at 175 degrees celcius for 20 minutes.
