I’ve been having such a problem with digesting quinoa and spinach lately. 30 minutes after eating it, I get a terrible stomach pain… like someone is stabbing my stomach. I love both of them to death and I hate not being able to eat them without having the pain!
It sounds like you might have a sensitivity! I’ve heard other people with very similar symptoms and they have to stop eating quinoa 🙁 I’d suggest cutting both out for at least 2 weeks and then reintroduce spinach, wait a few days, then try quinoa. My guess tho? It’s the quinoa! (so sadddd!)
I’d love recipes that don’t demand so much chopping vegetables and such, since I have a disease which makes it difficult for me to use my hands too much.

2 or 3 breakfast cookies are a meal? Coincidentally, this morning I had your chocolate breakfast cookies and I had 4 and was still hungry! They’re good but I need more than 2 or 3. Maybe I made mine smaller?? I hope!
